Bernard Gotz, executive chef at Little America Hotel, recently returned from Florida where he competed for and won the title "Chef of the Year" at the American Culinary Federation's annual conference.
We have had numerous requests from our loyal customers in regards to two different things. The first is to do something about the strong sunlight during certain hours of the day. We're happy to say we finally figured that out.
The other request was to have the menu displayed on the wall to help the line move more smoothly and for our patrons not to feel rushed while ordering. We are excited to announce we had the wall menus put up last week!

Did you know you are able to use our demo kitchen for gatherings? We require a 10-person minmum and for each person to spend $10 while at Blue Lemon. Just call to check if it's available--it's as easy as that!
We've had groups come in and host an "Iron Chef Date Night" with friends, use it as a meeting place for an adoption seminar and reserve it for a local "Tweet-Up" with co-workers.

Here is some information on a couple products pictured above:
Agave Nectar
Agave nectar is a natural sweetener marketed as a healthy alternative to processed sugars as well as an alternative to honey, corn syrup and similar liquid sweeteners. The syrup is made from blue agave, a type of succulent, cactus-like plant that is also used in the production of tequila. The thick liquid comes in light and dark forms, the latter being unfiltered, and tastes similar to honey. It has a very low
Glycemic Index (GI) value, so although it is noticeably sweeter than sugar it doesn't cause the same type of "sugar rush" that other sweets do. On a scale from 1 to 100, table sugar has a GI value of 68 while honey comes in at 55. Agave syrup has a value of around 15.
Agave syrup can be used in baked goods; simply reduce the amount of liquid in the recipe to account for it. Starting with a recipe that already calls for honey and substituting it in is a good way to start, but as a general rule you will need to spend some time playing around with your favorite recipes to get them to work, especially if you want to substitute it into a recipe that calls for crystallized sugars. The syrup will dissolve easily in liquids and is a good choice for sweetening iced tea or lemonade.
Coconut Oil
Coconut oil can be used in many recipes to replace or augment shortening or butter, can replace oils used for frying or sauteing and add flavor to certain dishes. To make coconut oil, fresh coconut meat is pressed and ground and then allowed to ferment for a day or so. The water is then removed and the pure coconut oil packaged. This uses minimal processing so it retains as much coconut flavor and scent as possible and as many healthy constituents as well.
Vegelene Pan Spray
This is a pure vegetable pan coating that prevents foods (especially homemade bread) from sticking to the pan. It is free of cholesterol, water, alcohol, calcium carbonate, silicon dioxide and sodium. You can use it on bread pans, cookie sheets, pie tins, and any food prep surface like copper, glass, pottery, stainless steel, utensils and more.
